Maximilian Oskar Bircher-Benner was a  Swiss physician and certainly a man before his time, at his sanatorium in Zürich he used, a diet of raw vegetables and fruit as a way to heal patients, he is best known for the invention of the muesli cereal

Below is the Bircher Muesli Recipe but has changed throughout the years.

The Bircher Muesli Recipe is made up as…

  • (1 person): a level dessert spoon of oat flakes
  • Three dessert spoons of water left to soften for 12 hours
  • Juice of half a lemon
  • Dessert spoon of condensed milk
  • 2 raw apples grated
  • A sprinkling of hazelnuts or almonds

(Bircher-Benner advised against milk as it could be contaminated with TB)

Max Bircher-Benner was very famous in his day with many followers and his muesli found its way into many homes. In the 1940s it was a popular family supper dish.

In the  1950s-1960s, however, it had extra ingredients such as cream and sugar. Industrially-produced muesli with dried fruits also came about, although this was far from the doctor’s original idea (he died in 1939). Nowadays muesli can be found in many forms.

For a hard-working man or woman, this is the ideal breakfast. If you know you are going to have a hard day at work, it is wise to prepare yourself and eat a healthy breakfast.

The actual idea was to have people start eating apples so that they would remain healthy.The recipe discussed below is only for one serving for one person:

  • 2 tablespoon of rolled oats
  • 6 tablespoons water
  • 2 apples grated, including their skins
  • Lemon juice, use half a lemon.
  • 2 tablespoons smooth sweetened condensed milk
  • 2 tablespoons of nuts and other assortments as you like (almonds, walnuts, hazelnuts or any other thing)

The next morning use the grated apples and add them to the oats.

They must have become mushy by now.

Add the rest of the ingredients starting with milk, lemon juice and nuts.
